Mom’s Go-To Berry Cobbler – A Quick & Easy Family Favorite

There’s nothing quite like the comforting taste of a homemade dessert, and my mom has the perfect recipe for those moments when our family is craving something sweet, warm, and absolutely irresistible. This berry cobbler is her go-to treat — she throws it together in no time with frozen mixed berries and a simple Bisquick biscuit topping. 

It’s the kind of dessert that disappears fast because everyone goes back for seconds (and thirds). Topped with a scoop of creamy French vanilla ice cream, it’s pure perfection in every bite. Whether it’s a last-minute weeknight indulgence or a cozy addition to a campfire meal, this cobbler is guaranteed to hit the spot!

Ingredients:

  • 4 cups frozen mixed berries (blueberries, raspberries, blackberries, etc.)
  • ½ cup granulated sugar (adjust to taste)
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest (optional for extra freshness)
  • 1 teaspoon vanilla extract
  • 1 cup Bisquick biscuit mix
  • ⅓ cup milk
  • 2 tablespoons melted butter
  • 1 tablespoon brown sugar (for topping)

Instructions:

  1. Prepare the berry filling:
    • Heat a cast iron skillet over medium heat and add the frozen mixed berries, sugar, cornstarch, lemon zest, and vanilla extract.
    • Stir occasionally and cook until the berries begin to release their juices and the mixture thickens slightly (about 5–7 minutes).
  2. Make the biscuit topping:
    • In a bowl, mix the Bisquick biscuit mix, milk, and melted butter until a soft dough forms.
    • Drop spoonfuls of the dough evenly over the berry mixture in the skillet
  3. Cook the cobbler:
    • Cover the skillet with a lid or aluminum foil and cook over low heat for 15–20 minutes, or until the biscuit topping is cooked through and golden brown.
  4. Finishing touch:
    • Sprinkle brown sugar over the biscuits and let it cook uncovered for another 2–3 minutes to caramelize slightly.
  5. Serve:
    • Let the cobbler cool for a few minutes, then serve warm with a scoop of vanilla ice cream.
