Hey there, welcome to my cozy kitchen corner! Today, I’m dishing up something special: my mouthwatering Gluten-Free Walnut Banana Bread recipe.

Trust me, this bread is like a warm hug on a plate! It’s packed with the sweet goodness of ripe bananas and the satisfying crunch of walnuts. If you want to add an element of decadence, add a 1/2 cup of dark chocolate chips. This is my favorite addition that makes this banana bread recipe that much better.

Now, here’s a little secret: going gluten-free isn’t just about dietary preferences.

For folks dealing with eczema, steering clear of gluten can be a game-changer. It’s a simple way to help manage the itch without relying solely on steroid creams or antihistamines.

For those who don’t know, I was diagnosed with eczema in 2018 shortly after graduating college. But what my dermatologist failed to acknowledge is that my full body eczema reaction didn’t happen out of no where — it was directly linked to a contact allergy I was having to Nickel in barbells at my local Crossfit gym.

Long story short, I battled with eczema and my doctor for eight months. The only thing that allowed me to resume my regular life activities was to cut out gluten completely. I paired this dietary change with a non-toxic skincare routine to naturally heal my eczema from the inside out.

Now, my skin is more prone to an eczema flare-up due to harsh conditions, intense laundry detergents, allergies, etc. That’s why I am constantly prepped and ready to bake some gluten-free goodies!

Let’s dive into this recipe and whip up a loaf that’s not only delicious but also friendly to sensitive skin.

Gluten-Free Banana Walnut Bread

Ingredients

  • 2 cups Bob’s Red Mill gluten free flour
  • 4-5 very ripe bananas (1 1/2 cups), mashed
  • 1/2 cup white granulated or coconut sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 2 tablespoons milk, dairy or nut
  • 1/2 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup walnuts, chopped

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan and set aside.
  • In a large bowl, combine flour, baking soda, baking powder, salt, and set aside. In a separate bowl, cream together butter and sugar. Stir in eggs, milk, vanilla, and mashed bananas until well blended. Stir banana mixture and walnuts into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  • Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for at least 15 minutes, then turn out onto a wire rack and cool another 30 minutes. Slice and serve warm!
