Preheat your oven to 400 degrees F (175°C). Lightly grease a 12-cup muffin tin with cooking spray or butter.
In a mixing bowl, prepare the pancake batter by mixing it with water until smooth. You can also add an extra scoop of vanilla protein powder if desired.
Add in the cooked sausage, cheddar cheese and maple syrup to the bowl. Mix until combined. Spoon pancake batter into each muffin cup, filling them about 3/4 way up. You can also use a cookie scoop to ensure they're evenly filled.
Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the McGriddle bites are golden brown and cooked through. You can test for doneness by inserting a toothpick into the center of a muffin – it should come out clean when they're ready.
Once baked, remove the muffin tin from the oven and allow the McGriddle bites to cool for a few minutes. Then, carefully remove them from the muffin tin and transfer them to a serving plate. Serve warm with a side of maple syrup for dipping or drizzling if desired.
